Easy Weeknight Potatoes

In the winter months or even the summer months having a good hearty side dish is so filling alongside a good protein source.

For us in the summer it is usually steaks or brats of some sort.

This potato side dish I have adapted from Emily Frisella and her cookbook which you can find HERE.

All of her recipes in both her cookbooks are easy and filling.

For this recipe I change it up just slightly.


2-3lbs red or mini potatoes

Salt, a few dashes

Pepper, a few dashes

Garlic, a few dashes

1-2 tbsp. butter

1/2 cup shredded cheese, I like parmesan

1/4 green onion, chopped


  1. Cut potatoes in half or fourths depending on how big they are

  2. Bring a pot of water to a boil and toss in the potatoes, boil on medium high for 10-12 minutes until potatoes are soft when forked.

  3. Drain the water and then toss the potatoes in a bowl with the other ingredients.

  4. Serve warm and enjoy!

That's it! Like I said it is super easy and takes all of 15 minutes to pull together. I will make these alongside a protein like I mentioned that perhaps I meal prepped for the week like smoked chicken or burgers.
